Coca-Cola Cake

Coca-Cola cake made it's depute during the 1950's. A southern classic, this wonderfully rich fudgy cake is great for family reunions. Don't expect the icing to be fluffy. The icing turns into a thin layer of fudge that helps keep it fresh and moist for days.

1 oblong or 2 round pans.

Ingredients

Cake

2 cups plain or all-purpose flour
2 cups sugar
2 sticks margarine, butter may be substituted
3 tablespoons cocoa
1 teaspoon vanilla extract
1 cup Coca-Cola
½ cup buttermilk
1 teaspoon baking soda
2 eggs, beaten
1½ cups miniature marshmallows

Icing

½ cup margarine, butter may be substituted
2 tablespoons cocoa
6 tablespoons Coca-Cola
1 box confectioners sugar
1 cup pecans, whole

Instructions

Cake

Preheat oven to 350℉ and prepare pans.
In a bowl, add 2 cups flour and 2 cups sugar. Blend together and sift. Set aside.
In a medium pot, add 2 sticks margarine, 1½ cups marshmallows, and 3 tablespoons cocoa. Cook over medium heat until marshmallows melt. Pour over flour mixture.
Add to flour mixture 2 beaten eggs. Mix well.
In a bowl, add 1 cup coke, ½ cup buttermilk, and 1 teaspoon vanilla. Combine well.
Pour into prepared pans and bake for 40 to 45 minutes, or until toothpick inserted in middle comes out clean.

Icing

In a medium pot, add ½ cup margarine, 2 tablespoons cocoa, and 6 tablespoons coke. Pour over confectioners sugar and beat until blended. Add nuts and spread on cake.
