Look no further than this salmon pasta for a quick and easy meal. Made with simple ingredients and fresh asparagus for an easy weeknight dinner.I’ve been making this recipe for years. It’s a go-to when I’m craving something light and fresh, but too tired to cook.Best of all, this salmon pasta also reheats well, making it great to pack for lunch the next day. It’s also great cold!
1poundasparagus,rough ends trimmed and cut into 1-inch pieces
2tablespoons,plus 1 teaspoon olive oil,divided
8ouncesrotini pasta,cooked according to package directions
1(6 ounce)can boneless skinless salmon
2 tablespoonsfresh lemon juice
2tablespoonsfresh dill,chopped
½teaspoongarlic powder
¼cupparmesan cheese,shredded
salt and pepper to taste
Instructions
Preheat oven to 400℉.
Place asparagus on baking dish. Drizzle 1 teaspoon olive oil over asparagus and season with salt and pepper. Bake 10 minutes or until tender.
Add to large bowl, cooked pasta, asparagus, 6 ounce can salmon, 2 tablespoons lemon juice, 2 tablespoons of olive oil, 2 tablespoons chopped dill, and ½ teaspoon garlic powder. Mix well.
Sprinkle with parmesan cheese before serving.
