In a medium pan, add oil and heat on medium heat. Add 1 diced onion. Sauté for 5 minutes.
Then add 4 cloves minced garlic and 24 ounces sliced mushrooms. Cook for another 10 minutes.
Then add to pan, 3 cups broth, 1 teaspoon thyme, and 2 tablespoons yeast. Set aside.
In a separate bowl, whisk ½ cup milk and 3 tablespoons arrowroot powder together until smooth. Add to pan and stir well. Simmer for 10 minutes while stirring occasionally until thick.
Season with salt and pepper, top with your favorite herbs.
