  • 24 ounces Highline® Mini Bella Mushrooms, sliced
  • 1 medium onion, diced
  • 2 tablespoons avocado oil
  • 4 cloves garlic, minced
  • 3 cups vegetable broth
  • 1 teaspoon thyme
  • 2 tablespoons nutritional yeast
  • 3 tablespoons arrowroot powder
  • ½ cup non-dairy milk
  • salt and pepper, to taste


  • In a medium pan, add oil and heat on medium heat. Add 1 diced onion. Sauté for 5 minutes.
  • Then add 4 cloves minced garlic and 24 ounces sliced mushrooms. Cook for another 10 minutes.
  • Then add to pan, 3 cups broth, 1 teaspoon thyme, and 2 tablespoons yeast. Set aside.
  • In a separate bowl, whisk ½ cup milk and 3 tablespoons arrowroot powder together until smooth. Add to pan and stir well. Simmer for 10 minutes while stirring occasionally until thick.
  • Season with salt and pepper, top with your favorite herbs.
