PB & J Raspberry Granola Parfait

Ingredients
  

Peanut Butter Granola

  • 3 cups old fashioned oats
  • ¼ cup peanut butter
  • ¼ cup honey
  • 1 teaspoon vanilla extract

Raspberry Jam

  • 2 cups Wish Farms Raspberries, muddled (crushed)
  • 1 cup sugar
  • 1 lemon wedge, juiced

Yogurt

  • 3 cups vanilla Greek yogurt, or your favorite yogurt of choice

Instructions
 

Peanut Butter Granola

  • Preheat oven to 275℉.
  • In a microwavable bowl, add ¼ cup peanut butter, ¼ cup honey, and1 teaspoon vanilla. Combine well and microwave until peanut butter is slightly melted and mix.
  • Pour the peanut butter mixture over 3 cups of oats. Combine well.
  • Spread the peanut butter oats evenly onto a baking sheet. Bake for 20 minutes.
  • Once baked, stir mixture and evenly pack it down in the baking sheet. Bake for approximately 10 more minutes.
  • Let the granola cool and place in refrigerator.

The Raspberry Jam

  • Wash and pat dry 2 cups raspberries.
  • Muddle (crush) the raspberries and pour into a pot. Cook on medium heat stirring until raspberries begin to boil.
  • Stir in 1 cup sugar followed by 1 juiced lemon wedge.
  • Continue to stir and allow the mixture to boil for about 10 minutes. Take the pot off the heat and let the jam cool.
  • Once cooled place in refrigerator.

Assemble Parfait

  • In 2 bowls assemble parfait in layers alternating with yogurt, jam, and granola.
  • Top with fresh berries!
