Rich's Pecan Pie
Pecan Pie is a rich southern tradition and this one is no exception. The recipe originated from Rich's Department Store in Atlanta. A southern institution Rich's department store was open in 1867 closed in 2005. People still rave about Rich's Bakery even though it hasn't been around for 18 years. Recipe compliments of Uncle Phaedrus, Finder of Lost Recipes and given to us by Nancy Bailey and Rob Robinson.
Equipment
- 8-inch pie shell baking dish
Ingredients
- 3 eggs, beaten
- 2 tablespoons butter or margarine, melted
- 2 tablespoons flour
- ¼ teaspoon vanilla
- ⅛ teaspoon salt
- ½ cup sugar
- 1½ cups dark corn syrup
- 1½ cups broken pecan halves
- 1 unbaked 8-inch pie shell
Instructions
- Preheat oven to 425℉.
- In a bowl, add 3 beaten eggs, 2 tablespoons melted butter or margarine, ¼ teaspoon vanilla, ⅛ teaspoon salt, ½ cup sugar, and 1½ cups dark corn syrup. Mix well.
- Sprinkle pecans over the bottom of pie shell and gently pour the syrup over the pecans.
- Bake for 10 minutes. Reduce heat to 325℉ and bake for about 40 minutes.

John (Rob) Robinson was born, raised, and attended school in the Cincinnati area of Ohio and returned there after serving two years in the US Army. His family was very involved in school and community activities in the City of Montgomery where John had accepted a position. John retired from the City of Montgomery in 1994 and relocated to Florida in 1998. Here John was involved in community activities, volunteered with the Leesburg Lightning summer collegiate baseball team, and served as a Road Captain with the Harley Club. John remains very active, enjoys travel, music, dining, and spending time with friends!
Nancy Bailey was born, raised, and attended school in Central Indiana. Nancy began playing music in 4th grade and continues to enjoy all styles of music. She has lived in Athens and Atlanta GA, Columbia SC and currently resides in central Florida. Wherever Nancy lived, she was involved in school, community, and church activities. After a 20-year membership in Civil Air Patrol the Auxiliary of the United States Air Force she retired as a Lt. Col. Nancy enjoys live music, live concerts, and dancing along with travel, dining and spending time with friends and family!
