Sweetpotato Chicken Kabobs

Equipment
- 15 wooden skewers
- Ziploc bag
- foil
Ingredients
- 1 pound chicken breast, cubed
- 1 medium zucchini, cut into 1 inch slices
- 1 medium squash, cut into 1 inch slices
- 1 red bell pepper, cut into 1 inch squares
- 1 medium sweetpotato, cut into 1 inch pieces
- ¼ cup avocado oil
- 1 lemon, juiced
- ½ teaspoon garlic powder
- ½ teaspoon salt
- 1 teaspoon Italian seasoning
Instructions
Prepare The Skewers
- If using wooden skewers, soak in a bowl of water overnight. Note: This will help prevent skewers from burning when baking or grilling. If unable to do this, soak them in water as long as possible before baking.
- Cut chicken into 1 inch cubes. Cut vegetables into 1 inch squares to slide onto skewers.
- In a large Ziplock bag, place chicken, vegetables and sweetpotato cubes. Add ½ cup avocado oil, 1 juiced lemon, ½ teaspoon garlic powder, ½ teaspoon salt, and 1 teaspoon Italian seasoning. Combine well and let marinate for 30 minutes.
- After letting chicken and veggies marinate, alternate chicken, vegetables, and sweetpotatoes slices on skewers. Repeat the process until you have filled skewers, leaving 1 inch at top of the stick for holding.
For Oven Roasted Kabobs
- Preheat oven to 450℉.
- Place kabobs on a baking sheet lined with foil. Make sure they are spread evenly apart and are not touching.
- Bake for 15 minutes and flip skewers. Continue to continue bake 10 to 12 more minutes, or until chicken is cooked through. Note: Chicken should be cooked to at least 165° internally.
For Grilled Kabobs
- Preheat grill.
- Place kabobs on a hot grill or grill pan. Make sure they are spread evenly apart and are not touching.
- Grill for 5 to 7 minutes on each side or until chicken is cooked through. Note: Chicken should be cooked to at least 165° internally.
Final Steps
- Once chicken is cooked, remove from oven or grill and squeeze a bit of fresh lemon juice over the top. Sprinkle with salt and serve.
- Serve With Rice, Your Favorite Grain, Vegetables Or Your Favorite Dip
