Ooey-Gooey Chocolate Zucchini Brownies

This zucchini brownie is a staple in my family. I firmly believe we can still enjoy delicious desserts while making them healthier by adding vegetables. The shredded zucchini is the perfect addition because it disappears right into the batter, creating an ooey-gooey and moist brownie. It adds moisture, allowing you to cut back on oil or butter. No one will even suspect it’s in there!

Ingredients

  • 1 zucchini, shredded
  • 2 eggs
  • ¼ cup cocoa powder
  • 1 cup almond flour
  • 2 tbsp melted butter
  • ¼ cup sugar
  • ½ tbsp baking powder
  • ¼ cup unsweetened chocolate chips

Instructions

  1. Preheat oven to 350F. Grease a 9×9-inch baking dish.
  2. In a medium bowl, stir the zucchini together with the eggs.
  3. Add in the remaining ingredients, except the chocolate chips, and mix until well combined.
  4. Pour brownie batter into the prepared baking dish. Sprinkle the top with chocolate chips.
  5. Bake at 350F for 30 minutes and enjoy!
