Fresh fruit and veggies are always a great way to refuel, but if you have a few extra minutes, you can use these quick snack recipes to mix it up for a tasty break in your day!
Goat Cheese & Honey Apple Rings
Fun snack alert! Slice an apple horizontally, then use any shape of mini cookie cutter to remove the center and seeds. Just add goat cheese, cinnamon and honey – so yummy!

Ingredients
- Large crisp apples of your choice
- Soft Goat Cheese, plain
- Ground cinnamon
- Honey
Instructions
- Place apples on a clean flat surface and carefully trim off the top and bottom of each apple. Cut each apple widthwise into about 6 slices (¼-inch thick minimum).
- Place the slices on a flat serving tray and use a mini open cookie cutter to cut out the center of each slices, removing the seeds etc.
- Using clean fingers, mold a slightly heaping teaspoon of the goat cheese into the center of each apple ring. Sprinkle cinnamon over the top if desired, then drizzle with honey!
No-Bake Blueberry Coconut Energy Balls
If you’ve got 5 minutes and a food processor, you can whip up No-Bake Blueberry Coconut Energy Balls as a make-ahead treat for the week! Roll them in chopped nuts for extra crunch, or dip in melted chocolate for a sweeter finish.

Ingredients
- 1 cup frozen blueberries, thawed and rinsed
- ½ cup coconut flour
- ¼ cup maple syrup
- ¼ cup melted coconut oil
- ½ cup unsweetened shredded coconut
Instructions
- In a food processor, combine blueberries, coconut flour, maple syrup, and coconut oil until blended.
- Shape into 1-inch balls; roll in shredded coconut.
- Store in an airtight container in the refrigerator for up to 3 days.
Variations: Alternatively, roll in chopped nuts or dip in melted chocolate.
Fiesta Ham Roll Up
Need to whip up something with what’s in the fridge? Kids love these simple roll ups with ham, string cheese and guacamole! Packs perfectly for school lunches or snacks on the go.

Ingredients
- Tortilla
- Ham
- String Cheese
- Guacamole
Instructions
- Using your favorite whole grain tortilla, layer the deli ham, string cheese and guacamole on top of the tortilla.
- Slice and add to school lunches, serve as an afterschool snack, or have available for kids’ pre-gaming on the sidelines of sports practices or matches.
Dark Chocolate & Cran-Raspberry Smoothie
Break out this quick and easy recipe for a mid-afternoon boost or post-workout meal. Bananas, raspberries and cran-raspberry juice pair beautifully with a hint of rich dark chocolate.

Ingredients
- 3 frozen bananas cut into chunks
- ½ cup frozen raspberries
- 1 oz dark chocolate roughly chopped
- ¾ cup cran-raspberry juice
Instructions
- Place all ingredients in a blender and puree until smooth.
- Garnish with chocolate shavings.
