Naked Farmer’s Vegan Caesar Salad
Featured In WTFCF Season 1, Episode 05: Farming In A Box. Kale becomes the star of this Caesar Salad. Add candied pecans for a new twist!
Ingredients
Ingredients Vegan Caesar Dressing
- 1 cup lemon juice
- 1 cup tahini
- 1 cup Dijon mustard
- 1 teaspoon salt
- 1 teaspoon black pepper
- ¾ cup water
- ¼ cup nutritional yeast
Ingredients Candied Pecans
- 1 pound pecans
- 2 teaspoons salt
- 2 teaspoons chili flakes
- ½ cup agave
Ingredients Caesar Salad
- 4 cups Brick Street Farms kale, packed
- 2 tablespoons vegan Caesar dressing
- 2 tablespoons candied pecans
Instructions
Prepare Vegan Caesar Dressing
- In a bowl add, 1 cup lemon juice, 1 cup tahini, ¼ cup Dijon mustard, 1 teaspoon salt, 1 teaspoon black pepper, ¾ cup water, and ¼ cup nutritional yeast. Blend until well mixed.
Prepare Candied Pecans
- Preheat oven to 350℉.
- Add 1 pound pecans to a bowl and toss with, 2 teaspoons salt, 2 teaspoons chili flakes, and ½ cup agave. Toast mixture for 5 minutes.
Prepare Pecan Kale Caesar Salad
- In a large mixing bowl add, 4 cups packed kale and 2 tablespoons candied pecans. Top with dressing.
- Toss and serve.
