Ingredients
  

  • pounds pork loin sirloin chops or pork shoulder blade steaks
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 tablespoon olive oil
  • 1 large RealSweet® onion, cut into narrow wedges
  • 1 can (14 ounces) Italian stewed tomatoes
  • 1 package (9 ounces) fresh linguini pasta, cooked according to instructions
  • grated parmesan cheese
  • fresh or dried Italian herbs to taste

Instructions
 

  • Trim the pork from bones and fat, pound, and cut into small cubes. Dust with 2 teaspoons cumin and 2 teaspoons oregano.
  • Heat 1 tablespoon oil in skillet. Once heated, add 1 sliced onion and cubed pork. Sauté over medium-high heat until cooked through, about 8 minutes.
  • Add to skillet, 1 can stewed tomatoes. Heat through.
  • Cook 1 package linguine according to package directions
  • Serve pork and onions over linguine. Sprinkle with Parmesan and herbs.
