Traditional Vietnamese Watermelon Salad With Shrimp

Watermelon Salad With Shrimp is easy to make and is a Vietnamese staple during the Lunar New Year.

Ingredients
  

  • 1 watermelon, cut into triangles
  • 2 tablespoons fish sauce
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 clove garlic, finely chopped
  • 1 small onion, finely chopped
  • 1 red pepper, finely chopped
  • roasted peanuts, to taste
  • fresh mint leaves, to taste
  • steamed shrimp
  • shrimp crackers

Instructions
 

  • In a bowl, add 2 tablespoons fish sauce, 2 tablespoons sugar, 2 tablespoons water and 1 tablespoon of lemon juice. Mix well and set aside.
  • In a skillet, add 1 finely chopped garlic clove, 1 finely chopped small onion and 1 finely chopped pepper. Sauté until soft.
  • In a second bowl, add 2 tablespoons fish sauce mixture and sautéed vegetables. Mix well.

To Serve

  • Cut watermelon into triangles and arrange on a plate.
  • Place in separate bowls: fish sauce mixture, mint leaves, peanuts, shrimp, and shrimp crackers.
