What’s For Dinner? Creamy One Pot Chicken, Broccoli And Rice

If you love a one pot chicken and rice recipe, it’s time to upgrade and add broccoli for a tasty veggie boost! This meal is satisfying and comforting – perfect for warming up on a chilly night. Even better, you only need five ingredients – the kind of staples you probably already have in your fridge and pantry. Add this Creamy One Pot Chicken, Broccoli and Rice to your regular dinner rotation!

Ingredients

  • 1 cup arborio rice
  • 3 cups chicken broth
  • 1 lb boneless skinless chicken thighs, cut into ½ inch pieces
  • ½ teaspoon ground black pepper
  • ½ teaspoon kosher salt
  • 3 cups broccoli florets, bite sized
  • ½ cup chive & onion cream cheese

Instructions

  1. Combine rice, chicken broth, chicken, and black pepper in a large pot over medium heat.
  2. Bring to a gentle boil over medium heat for 2-3 minutes. Then, reduce heat to medium-low, cover, and simmer for 15 minutes. Stir occasionally, as arborio rice is best left to rest while it absorbs liquid.
  3. Once most of the free liquid is absorbed, add the broccoli, cover, and cook for another 7-8 minutes, until the broccoli is tender and bright green, rice is creamy and cooked through, and the chicken is cooked to 165F internal temperature.
  4. Remove from heat and immediately stir in the cream cheese – let it melt and coat the rice evenly. Season with additional salt and pepper to taste as needed.
  5. Serve hot.
