If you love a one pot chicken and rice recipe, it’s time to upgrade and add broccoli for a tasty veggie boost! This meal is satisfying and comforting – perfect for warming up on a chilly night. Even better, you only need five ingredients – the kind of staples you probably already have in your fridge and pantry. Add this Creamy One Pot Chicken, Broccoli and Rice to your regular dinner rotation!
Ingredients
- 1 cup arborio rice
- 3 cups chicken broth
- 1 lb boneless skinless chicken thighs, cut into ½ inch pieces
- ½ teaspoon ground black pepper
- ½ teaspoon kosher salt
- 3 cups broccoli florets, bite sized
- ½ cup chive & onion cream cheese
Instructions
- Combine rice, chicken broth, chicken, and black pepper in a large pot over medium heat.
- Bring to a gentle boil over medium heat for 2-3 minutes. Then, reduce heat to medium-low, cover, and simmer for 15 minutes. Stir occasionally, as arborio rice is best left to rest while it absorbs liquid.
- Once most of the free liquid is absorbed, add the broccoli, cover, and cook for another 7-8 minutes, until the broccoli is tender and bright green, rice is creamy and cooked through, and the chicken is cooked to 165F internal temperature.
- Remove from heat and immediately stir in the cream cheese – let it melt and coat the rice evenly. Season with additional salt and pepper to taste as needed.
- Serve hot.
