Easy Weeknight Walking Tacos are fast, flexible and so kid-friendly! Each member of the family can assemble their own tacos, starting with the base of mildly seasoned ground beef and zucchini. We recommend toppings like lettuce, tomato, avocado, salsa and cheese – but you can incorporate other favorites like black beans, corn, onions or jalapeños. Package these tacos for lunch or dinner on the go or enjoy them at home. They’re equally yummy either way!
Easy Weeknight Walking Tacos
Prep Time: 15 mins – Cook Time: 15 mins – Servings: 4
Ingredients
- 1 pound lean ground beef of choice
- 1 cup zucchini finely shredded, using a box grater or food processor
- 2 ½ tablespoons mild taco seasoning
- ½ cup water
- 3 cups corn chips, lightly crushed
- ½ cup shredded lettuce
- ½ cup diced tomatoes
- ½ cup diced avocados
- ½ cup shredded mild cheddar cheese
- ½ cup mild salsa
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat if needed.
- Add zucchini, taco seasoning, and water. Stir well and simmer 5-8 minutes until zucchini is soft and mixture is slightly saucy.
- Prepare chips and toppings: Lightly crush chips and portion toppings into small bowls for easy assembly.
- Assemble the walking tacos: In each individual taco – add ¾ cup chips, spoon ½ cup
