Spicy Tuna Pasta With Broccolini
Prep Time: 10 mins – Cook Time: 15 mins – Servings: 2
Ingredients
- 8 oz dry penne pasta
- 6 ounces broccolini, trimmed
- 1 can (5 oz) olive-oil packed tuna, lightly drained
- 3 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons chili garlic sauce
- ½ lemon (zest and juice)
- Pinch of kosher salt
- Pinch of ground black pepper
Instructions
- Bring a large pot of salted water to a boil. Cook pasta until just al dente. Reserve approximately ¼ cup of pasta water, then drain.
- While the pasta cooks, heat olive oil in a skillet over medium heat. Add broccolini and a pinch of salt. Cook 3-5 minutes, stirring occasionally, until broccoli is tender and bright green. You may need to add a few tablespoons of the pasta water if the broccolini looks too dry.
- Lower the heat slightly and add garlic and chili garlic sauce until evenly mixed.
- Add the tuna to the skillet and gently break into large flakes. Warm through for about a minute.
- Add drained pasta to the skillet. Pour in approximately ¼ cup of the reserved pasta water.
- Turn off the heat. Add the lemon zest and juice. Serve.
