Southern Peanut Pie

Sometimes called "poor man's pecan pie" this sweet treat will not disappoint!

Equipment

  • hand beater

Ingredients
  

  • 3 eggs
  • ¼ cup sugar
  • cups dark corn syrup
  • ¼ cup butter, melted
  • ¼ teaspoon salt
  • ½ teaspoon vanilla
  • cups chopped roasted Virginia peanuts
  • 9 inch unbaked pie shell

Instructions
 

  • Preheat oven to 375℉.
  • In a medium bowl, beat eggs until foamy. Add in ¼ cup sugar, 1½ cups dark corn syrup, ¼ cup melted butter, ¼ teaspoon salt, and ½ teaspoon vanilla. Continue to beat until thoroughly blended.
  • Stir in peanuts and pour mixture into unbaked pie shell. Bake at 375℉ degrees for 45 minutes.
  • Can be served warm or cold with whipped cream or ice cream.
