Grilled Veggie Foil Packets
Prep Time: 10 mins — Cook Time: 15 mins — Servings: 4
Ingredients
- 2 zucchini
- 2 yellow squash
- 2 red bell peppers
- 2 tbsp avocado oil, divided
- ½ tsp garlic powder, divided
- ½ tsp salt, divided
- ½ tsp onion powder, divided
- ½ tsp smoked paprika, divided
- ½ tsp black pepper, divided
- ¼ cup shredded parmesan cheese
Instructions
- Preheat grill to at least 400°F.
- Cut the zucchini, yellow squash, and bell peppers into thick strips.
- Divide the vegetables between two large sheets of aluminum foil (about 17 x 17 inches each).
- Drizzle each foil packet with 1 tablespoon avocado oil. Season each packet with ¼ teaspoon garlic powder, onion powder, salt, black pepper, and smoked paprika. Toss to coat.
- Top each packet with 2 tablespoons shredded parmesan cheese.
- Fold the foil tightly to seal the packets.
- Place foil packets on the grill seam side up and cook for 15 minutes. Do not flip.
- Carefully remove from the grill and let cool slightly before opening. Serve immediately.
