Overnight-Style Hawaiian Baked Oats: A Kid-Friendly Breakfast

If you’re a fan of make-ahead breakfasts for busy mornings then this kid-friendly recipe will be your new favorite; these overnight-style Hawaiian baked oats with banana & pineapple are perfect make-ahead mornings!

Ingredients

  • Nonstick cooking spray
  • 2c gluten free rolled oats
  • 3T light brown sugar
  • 2tsp baking powder
  • 1tsp kosher salt
  • ¾ cup lite coconut milk, canned
  • bananas
  • 1 egg
  • 1 tsp vanilla
  • ½ cup non fat vanilla greek yogurt
  • ½ cup diced pineapple
  • Chopped pecans, maple syrup, additional banana slices (optional)

Instructions

  1. Prepare an 8-inch square baking dish nonstick cooking spray.  Preheat oven to 350F.
  2. Pulse oats in high power blender until fine powder.
  3. Add sugar, baking powder, salt, coconut milk, bananas, egg, vanilla and yogurt to blended.  Combine until smooth.
  4. Pour batter into prepared pan.  Sprinkle top of oats with pineapple and bake 30-35min.
  5. Serve oatmeal topped with nuts, syrup or additional bananas if desired!
