Honey-Miso Air Fryer Salmon With Broccoli And Potatoes

This amazing salmon can't be beat. Add a little honey for sweetness, potatoes, and broccoli for a fantastically satisfying meal.

Ingredients
  

  • 2 - 6 ounce cans Mowi salmon filets
  • 3 tablespoons white miso paste
  • 3 tablespoons honey
  • 1 cup fingerling potatoes, washed and cut into small pieces
  • 6 ounces broccoli, cut into bite size pieces
  • Olive oil
  • salt and pepper, to taste
  • optional dried herbs, like thyme

Instructions
 

  • Preheat air fryer to 400℉.
  • Remove salmon filets from packaging and dry thoroughly with a paper towel.
  • In a bowl, mix 3 tablespoons miso paste and 3 tablespoons honey. Brush liberally on top of salmon, reserving any extra mixture for later. 
  • In a bowl, toss 1 cup cut potatoes and 6 ounces cut broccoli in olive oil and season with salt and pepper, and optional dried herbs.
  • Working in batches or if your air fryer is large enough, air fry salmon, broccoli and potatoes together for 10 to 12 minutes or until salmon is cooked to your liking.
  • Serve salmon with potatoes and broccoli and drizzle the remaining honey-miso mixture throughout.
