Lemon Dill Salmon Pasta With Asparagus

Look no further than this salmon pasta for a quick and easy meal. Made with simple ingredients and fresh asparagus for an easy weeknight dinner.
I’ve been making this recipe for years. It’s a go-to when I’m craving something light and fresh, but too tired to cook.
Best of all, this salmon pasta also reheats well, making it great to pack for lunch the next day. It’s also great cold!

Equipment

  • cheese grater
  • citrus juicer
  • baking dish

Ingredients
  

  • 1 pound asparagus, rough ends trimmed and cut into 1-inch pieces
  • 2 tablespoons, plus 1 teaspoon olive oil, divided
  • 8 ounces rotini pasta, cooked according to package directions
  • 1 (6 ounce) can boneless skinless salmon
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons fresh dill, chopped
  • ½ teaspoon garlic powder
  • ¼ cup parmesan cheese, shredded
  • salt and pepper to taste

Instructions
 

  • Preheat oven to 400℉.
  • Place asparagus on baking dish. Drizzle 1 teaspoon olive oil over asparagus and season with salt and pepper. Bake 10 minutes or until tender.
  • Add to large bowl, cooked pasta, asparagus, 6 ounce can salmon, 2 tablespoons lemon juice, 2 tablespoons of olive oil, 2 tablespoons chopped dill, and ½ teaspoon garlic powder. Mix well.
  • Sprinkle with parmesan cheese before serving.
