Southern Peanut Pie
Sometimes called "poor man's pecan pie" this sweet treat will not disappoint!Featured In WTFCF Season 5, Episode 09: Peanuts!

Ingredients
- 3 eggs
- ¼ cup sugar
- 1½ cups dark corn syrup
- ¼ cup butter, melted
- ¼ teaspoon salt
- ½ teaspoon vanilla
- 1½ cups chopped roasted Virginia peanuts
- 9 inch unbaked pie shell
Instructions
- Preheat oven to 375℉.
- In a medium bowl, beat eggs until foamy. Add in ¼ cup sugar, 1½ cups dark corn syrup, ¼ cup melted butter, ¼ teaspoon salt, and ½ teaspoon vanilla. Continue to beat until thoroughly blended.
- Stir in peanuts and pour mixture into unbaked pie shell. Bake at 375℉ degrees for 45 minutes.
- Can be served warm or cold with whipped cream or ice cream.
