Vegan Mushroom Gravy

Ingredients
- 24 ounces Highline® Mini Bella Mushrooms, sliced
- 1 medium onion, diced
- 2 tablespoons avocado oil
- 4 cloves garlic, minced
- 3 cups vegetable broth
- 1 teaspoon thyme
- 2 tablespoons nutritional yeast
- 3 tablespoons arrowroot powder
- ½ cup non-dairy milk
- salt and pepper, to taste
Instructions
- In a medium pan, add oil and heat on medium heat. Add 1 diced onion. Sauté for 5 minutes.
- Then add 4 cloves minced garlic and 24 ounces sliced mushrooms. Cook for another 10 minutes.
- Then add to pan, 3 cups broth, 1 teaspoon thyme, and 2 tablespoons yeast. Set aside.
- In a separate bowl, whisk ½ cup milk and 3 tablespoons arrowroot powder together until smooth. Add to pan and stir well. Simmer for 10 minutes while stirring occasionally until thick.
- Season with salt and pepper, top with your favorite herbs.
