What’s For Lunch? Hearty Mediterranean Veggie Sandwich

Got 15 minutes to make a quick lunch? You can assemble one melty, deeply satisfying sandwich bursting with flavor – and veggies. One half of your sliced ciabatta roll gets the sliced mozzarella and (optional) deli turkey. The other half is piled with spinach, roasted red peppers, artichoke hearts, red onion and kalamata olives. Serve your Hearty Mediterranean Veggie Sandwich oven-warmed and gooey.

Hearty Mediterranean Veggie Sandwich

Prep Time: 5 mins – Cook Time: 10 mins – Servings: 1

Ingredients

  • 1 ciabatta roll
  • ½ cup loosely packed baby spinach leaves, stems removed
  • strips roasted red peppers
  • ¼ cup chopped marinated artichoke hearts, drained
  • 2-3 thin rings of red onion
  • 1 tablespoon sliced kalamata olives
  • 2 ounces fresh mozzarella, sliced
  • 1 tablespoon mayonnaise
  • 2-3 ounces deli turkey, sliced (optional)

Instructions

  1. Preheat oven to 400F. Slice the ciabatta roll. Place cut side up on a tray and heat until lightly toasted for 3-4 minutes. Remove from the oven.
  2. Spread the garlic aioli evenly over each slice. On the bottom half, place the mozzarella slices.
  3. On the top half, layer the veggies: spinach, roasted red peppers, artichoke hearts, red onion, and top with kalamata olives.
  4. Place both halves in the oven to warm the veggies and melt the cheese for an additional 2-4 minutes. Optional: layer the turkey over the cheese.
  5. Remove from the oven and press the halves together gently. Serve warm.
