Global Food And Beverage Industry Representatives Coming To Orlando To Learn Latest Flavor Research

Flavor comes from a combination of nature and science. Food and beverage industry representatives from across the world will gather in Orlando in March to learn the research behind unique tastes and aromas.

Scientists from the UF/IFAS Citrus Research and Education Center (CREC) and the UF Center for Smell and Taste cohost the Third International Flavor Summit, March 4-6.

“Meetings will offer insights into such topics as modulating taste and how to use artificial intelligence to create flavor,” said Yu Wang, a UF/IFAS associate professor of food science and human nutrition at CREC, in Lake Alfred, and at the Center for Smell and Taste.

Speakers for the summit include representatives from IFF, Symrise, Givaudan and ADM as well as other flavor experts.

Wang touts the summit as a way for industry and science to share data.

We will pass this new knowledge along to our stakeholders, who include food and beverage companies, growers and other scientists, so consumers can have the tastiest and most aromatic foods and drinks on the market.

The meetings will feature topics such as:

  • The history and evolution of flavor science.
  • Creating flavors to adapt to the rapid evolution of dairy.
  • Digitizing smell with an odor map.
  • Bitterness blockers.
  • Revolutionizing the world of flavor creation.

In addition to experts from industry, government and academic institutions speaking on topics, the conference will also include many informal opportunities to network with colleagues. One such chance comes March 5, when conference attendees are invited to tour Southern Hill Farms.

Participants may register up to the start of the conference. For additional information, please visit the website. Meals and transportation to the special event are included in the registration fee.

The conference will be held at the Holiday Inn Lake Buena Vista within walking distance of Walt Disney World’s Disney Springs and easy transport to many of Orlando’s leading entertainment venues.
